Lycopene, an unsaturated olefin compound, is the main pigment in mature tomatoes and is a common Carotenoid. Lycopene does not have the beta-carotene β-angelica ketone ring structure, so it can not be converted into vitamin A in the body and is not a pro-vitamin A. The formula is C40H56, which has many cis–trans isomerism. Lycopene is a fat-soluble substance. It is insoluble in water, methanol and ethanol. It is soluble in ether, petroleum ether, hexane and acetone. It is also soluble in organic solvents such as chloroform, carbon disulfide and benzene. There are 11 conjugated double bonds and 2 non-conjugated double bonds in lycopene molecule, so its stability is very poor, and it is easy to occur cis-trans isomerization and oxidation degradation.
